Ingredients
  

For the Chicken

  • 1 pound Boneless Chicken Breast Can substitute with thighs
  • 2 tablespoons Greek Seasoning Store-bought or homemade

For the Rice Base

  • 1 cup Rice White or brown, cook in chicken broth for flavor

For the Fresh Salad

  • 1 cup Cucumber Chopped
  • 1 cup Tomatoes Cherry or grape, halved
  • 1/2 cup Red Onion Soaked in ice water
  • 1/2 cup Castelvetrano Olives Pitted and chopped
  • 1/2 cup Feta Cheese Crumble or use goat cheese

For the Dressing

  • 1/4 cup Olive Oil Extra virgin preferred
  • 2 tablespoons Red Wine Vinegar Can substitute with lemon juice
  • 2 tablespoons Mayonnaise Greek yogurt can be a lighter option
  • 1 tablespoon Dijon Mustard Zesty flavor
  • 1 teaspoon Honey Optional, for balancing
  • 1 teaspoon Dried Oregano Fresh preferred but dried works
  • 1 teaspoon Dried Basil Fresh preferred but dried works
  • 1/2 teaspoon Garlic Powder Or fresh garlic to taste
  • to taste Pepper Essential for seasoning
  • to taste Salt Essential for seasoning

Instructions
 

Preparation

  • Cook the rice according to the package directions.
  • Chop the cucumber and tomatoes into bite-sized pieces. Mince the red onion and soak it in ice water for about 10 minutes.
  • In a mixing bowl, toss together the cucumber, tomatoes, drained red onion, olives, and crumbled feta. Drizzle with olive oil and red wine vinegar, sprinkle with salt, and gently toss.
  • In a jar, combine olive oil, red wine vinegar, mayonnaise, Dijon mustard, honey, oregano, basil, garlic powder, salt, and pepper. Shake until well blended.
  • Cut chicken into 1-inch pieces and sprinkle with Greek seasoning. Heat olive oil in a skillet over medium-high heat. Cook for 4-5 minutes per side until golden brown and cooked through.
  • Let the chicken rest for about 5 minutes to keep it juicy. Fluff the rice with a fork.
  • Divide rice into bowls. Top with chicken, salad mixture, and drizzle on dressing. Add fresh mint if desired.

Notes

For an extra crunch, add toasted pine nuts on top before serving.
