Ingredients
  

For the Soup

  • 4 cups yellow onions substitute with Vidalia or white onions
  • 3 cloves garlic fresh preferred
  • 2 medium carrots can substitute with parsnips
  • 2 stalks celery substitute with leeks for different flavor
  • 1 pound boneless skinless chicken breasts thighs can be used
  • 1 teaspoon dried thyme fresh thyme can be substituted
  • 2 leaves dried bay leaves consider using fresh
  • 1 1/4 cup all-purpose flour gluten-free flour can be substituted
  • 1 cup dry white wine can replace with chicken broth
  • 1/4 cup dry sherry optional
  • 4 cups chicken broth opt for low-sodium
  • 2 tablespoons unsalted butter can use margarine

For Serving

  • 1 cup Gruyère cheese Swiss or mozzarella can be used
  • 1 baguette baguette any crusty bread is fine

Instructions
 

Preparation

  • Slice yellow onions, dice carrots and celery, and mince garlic.
  • Melt unsalted butter in a large pot over medium heat, add onions, thyme, bay leaves, and seasonings. Cook uncovered for 35-45 minutes until golden brown.
  • Push onions to one side and add minced garlic. Sauté until fragrant then add diced carrots and celery.
  • Pour in white wine and sherry to deglaze, simmer for 2-3 minutes.
  • Stir in flour and cook for 1 minute, then gradually add chicken broth while whisking.
  • Add chicken breasts and cook until 165°F, about 12-20 minutes, then shred.
  • Return shredded chicken to the pot and remove bay leaves.
  • Broil sliced baguette until toasted, top with Gruyère cheese, and broil until melted.
  • Ladle soup into bowls and top with cheesy baguette.

Notes

Optional: Garnish with fresh thyme for added flavor.
