  • In a mixing bowl, combine olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and pepper. Stir until well-blended, then coat the sirloin steak completely. Allow it to marinate for 30 minutes to 4 hours for maximum flavor.
  • In a separate bowl, combine Greek yogurt, chopped fresh herbs, and honey. Stir well, cover it, and place it in the fridge to chill.
  • Whisk together equal parts olive oil and lemon juice (and honey if using) in a small bowl. Set aside.
  • Heat a skillet over medium-high heat. Sear the marinated steak for 4-5 minutes per side until it reaches a lovely medium-rare color. Allow it to rest for a few minutes before slicing it thinly.
  • Start with a base of your chosen cooked grains in each bowl. Layer on the sliced steak, followed by roasted chickpeas, cherry tomatoes, cucumber, red onion, and kalamata olives. Drizzle with tzatziki and vinaigrette.
