Cooking Steps

  • Combine raw chicken breast with lemon juice, white wine vinegar, oregano, garlic powder, thyme, kosher salt, and black pepper in a ziplock bag and massage. Refrigerate for 30 minutes to 8 hours.
  • Remove chicken from marinade, pat dry with a paper towel.
  • Heat skillet over medium heat, add 1 teaspoon of olive oil. Cook chicken for 4-5 minutes on each side until golden brown.
  • In a mixing bowl, combine cucumbers, tomatoes, olives, red onion, and feta cheese. Mix until well combined.
  • Dish out 1/2 cup of rice, top with 3/4 cup cucumber salad and 4 ounces diced chicken per bowl.
  • For meal prep, combine chicken and rice in containers; keep salad separate.

Notes
