Ingredients
  

For the Salmon

  • 1 lb Salmon Filet skin-on is best for moisture retention
  • 4 Tbsp Salted Butter softened for easy mixing

For the Crust

  • 1 cup Parmesan Cheese freshly grated
  • 1 cup Panko Breadcrumbs high-quality for crunch
  • 2 clove Garlic minced fine
  • 2 Tbsp Chives chopped
  • 1 Tbsp Thyme fresh preferred
  • 2 Tbsp Parsley fresh, chopped
  • 1 Tbsp Lemon Zest zest of one lemon

For the Lemon Mixture

  • 2 Tbsp Lemon Juice freshly squeezed

Cooking Instructions

  • Preheat the oven to 425°F (220°C).
  • Pat the salmon filet dry with paper towels and place it skin-side down on a parchment-lined baking sheet.
  • In a medium bowl, mix panko breadcrumbs, Parmesan cheese, garlic, chives, thyme, parsley, and lemon zest.
  • In a small bowl, whisk together the softened butter and lemon juice until fluffy.
  • Brush half of the lemon-butter mixture over the salmon.
  • Stir the remaining lemon-butter into the breadcrumb mixture until it’s damp.
  • Press the breadcrumb mixture over the salmon to create a thick crust.
  • Bake for 20-25 minutes until the crust is golden and internal temperature reaches 145°F (63°C).
  • Let the salmon rest for 3-5 minutes before serving.

Notes

Optional garnishes include fresh parsley or extra lemon wedges.
