Bowl Assembly

  • 4 cups Cooked Jasmine Rice Brown rice or quinoa are alternatives.
  • 2 cups Shredded Cabbage Mix with bell peppers or carrots for variety.
  • 1 cup Cucumber
  • 1/4 cup Green Onion
  • 1 cup Wonton Strips Optional; can be replaced with crushed nuts.
  • 2 tablespoons Sesame Seeds Optional for garnish.

Preparation

  • Make the Bang Bang Sauce: Whisk together mayo, sweet chili sauce, and sriracha in a bowl. Chill in the refrigerator until needed.
  • Marinate the Chicken: Combine marinade ingredients in a resealable bag with the chicken. Seal and refrigerate for 20-30 minutes.

Cooking

  • Cook the Chicken: Heat olive oil in a skillet over medium heat. Add the marinated chicken and cook for about 8 minutes without flipping.
  • Flip and continue to cook for 5-6 minutes more until the chicken reaches an internal temperature of 165°F.
  • Rest and Slice Chicken: Transfer the chicken to a plate and let it rest for 3-5 minutes before slicing into bite-sized strips.

Assembly

  • Assemble Bowls: Start with a warm cup of jasmine rice as the base. Layer with fresh veggies and top with sliced chicken.
  • Drizzle with bang bang sauce, and finish with green onions and sesame seeds.
  • Optional: Add crispy wonton strips for extra crunch!
