Steps

  • Generously season both sides of the chicken breasts with kosher salt and black pepper.
  • Pour the all-purpose flour into a shallow bowl or plate. Dredge each chicken breast in the flour, shaking off any excess.
  • In a large skillet on medium-high heat, add 2 tablespoons of unsalted butter and 2 tablespoons of extra virgin olive oil. Once the butter is melted and bubbling, add the chicken. Sauté for 2-4 minutes per side until the chicken is cooked through and beautifully golden brown. Remove from skillet, cover with foil, and set aside.
  • In the same skillet, add the remaining 4 tablespoons of butter. Allow it to melt and foam up, then add the fresh sage leaves. Let the mixture brown and bubble for about 2-3 minutes.
  • Carefully pour in the lemon juice and white wine (or chicken broth). Simmer for 2-3 minutes, scraping any tasty browned bits from the bottom of the pan. Season the sauce with extra salt and pepper as needed. When it thickens slightly, return the chicken to the skillet to warm through, then top with the crispy sage.
