For the Brisket

  • 2-3 pounds corned beef brisket
  • 4 cloves garlic minced
  • 1 teaspoon black peppercorns
  • 2 leaves bay leaves
  • 0.5 teaspoon mustard seeds
  • 0.5 teaspoon coriander seeds
  • 4 whole cloves

For the Vegetables

  • 1 large onion quartered
  • 1 small head cabbage cut into 6 wedges
  • 3 medium potatoes peeled and quartered
  • 3 medium carrots peeled and cut into thick slices

For Seasoning

  • salt to taste

Cooking Instructions

  • Start by placing the corned beef brisket in a large pot. Cover it fully with water, ensuring the meat is completely submerged for even cooking.
  • Toss in the quartered onion, minced garlic, bay leaves, peppercorns, mustard seeds, coriander seeds, and whole cloves. Stir gently to combine the ingredients and infuse the flavors.
  • Bring the pot to a boil, then reduce the heat to a simmer. Cover and let it cook for 2 to 2.5 hours until the brisket is fork-tender.
  • After the brisket is tender, add the peeled and quartered potatoes and thick slices of carrots. Cook for an additional 10-15 minutes, until they begin to soften.
  • Place the cabbage wedges on top of the vegetables in the pot. Cook for another 15-20 minutes, or until the cabbage is tender.
  • Remove the beef and vegetables from the pot. Slice the beef against the grain for optimal tenderness and serve it hot alongside the vegetables.
  • Offer mustard or horseradish on the side for added zest.
