Ingredients
  

For the Chicken Marinade

  • 1 pound Chicken Breast Substitution Note: Chicken thighs can also be used for a juicier option.
  • 2 tablespoons Lemon Juice Substitution Note: Lime juice can be used for a different tang.
  • 2 tablespoons White Wine Vinegar Substitution Note: Apple cider vinegar can be used.
  • 1 tablespoon Oregano (dried) Substitution Note: Italian seasoning may work if oregano is unavailable.
  • 1 teaspoon Garlic Powder Fresh garlic can be used if available.
  • 1 teaspoon Thyme (dried) Leave out if not available, or use a pinch of Italian herbs.
  • 1 teaspoon Kosher Salt Substitution Note: Use half for regular table salt.
  • 1 teaspoon Black Pepper
  • 2 tablespoons Olive Oil Substitution Note: Any neutral oil is acceptable.

For the Cucumber Salad

  • 2 cups Cucumbers Substitution Note: Any firm cucumber variety works, such as Persian.
  • 1 cup Roma Tomatoes Use cherry tomatoes as an alternative.
  • 1/2 cup Kalamata Olives Can be replaced with black olives.
  • 1/2 small Red Onion Substitution Note: Sweet onion can be used for a milder taste.
  • 1/2 cup Feta Cheese Substitution Note: Use crumbled goat cheese for a different flavor.

For the Bowl

  • 2 cups White Rice Can sub with quinoa or couscous for variety.

Preparation

  • In a large ziplock bag, mix the chicken with the lemon juice, white wine vinegar, oregano, garlic powder, thyme, salt, black pepper, and olive oil. Massage the bag gently to coat the chicken thoroughly.
  • Allow the chicken to marinate in the fridge for at least 30 minutes, or up to 8 hours for a richer flavor.
  • Heat a skillet over medium heat and add olive oil. Once hot, cook the marinated chicken for 4-5 minutes per side until it's golden brown and reaches an internal temperature of 165°F.
  • Remove the chicken from the skillet and let it rest for about 8-10 minutes. Slice it into strips.
  • In a bowl, combine the cucumbers, tomatoes, olives, red onion, feta, olive oil, vinegar, oregano, garlic powder, dill, salt, and pepper. Mix everything well.
  • To create each bowl, start with 1/2 cup of rice, add 3/4 cup of cucumber salad on top, and finish with 4 ounces of sliced chicken.
