Ingredients
  

For the Base

  • 2 tablespoons Olive Oil consider using avocado oil
  • 1 medium Onion diced finely
  • 1 medium Bell Pepper any color, or substitute with zucchini
  • 3 cloves Garlic freshly minced

For the Seasoning

  • 1 teaspoon Cumin or chili powder as a substitute
  • 1 teaspoon Paprika smoked paprika optional
  • 1/4 teaspoon Cayenne Pepper adjust to spice preference
  • 1 teaspoon Chipotle Powder optional
  • 1/2 teaspoon Black Pepper freshly cracked
  • 1 teaspoon Salt adjust to taste

For the Soup

  • 4 cups Chicken Stock or vegetable stock for a vegetarian version
  • 1 can Black Beans rinsed well
  • 1 cup Corn can be omitted for lower-carb option
  • 2 cups Cooked Turkey leftover works well

For Finishing Touches

  • 1 tablespoon Lime Zest zest during cooking
  • 2 tablespoons Lime Juice add at the end
  • 1/4 cup Fresh Cilantro optional

Instructions
 

Preparation

  • Start by dicing the onion and bell pepper, mincing the garlic, and zesting the limes.
  • Heat the olive oil in a large pot over medium heat. Add the diced onion and bell pepper, cooking for about 5-10 minutes until they become soft and translucent.
  • Stir in the minced garlic, cumin, paprika, cayenne pepper, black pepper, salt, and chipotle powder. Cook for about 1 minute.
  • Pour in the chicken stock and bring it to a boil, then let it simmer for 2-3 minutes.
  • Add in the black beans, corn, cooked turkey, and lime zest. Let everything simmer for another 5 minutes.
  • Remove the pot from heat and stir in the lime juice and chopped cilantro just before serving.

Notes

Customize the soup by swapping ingredients based on your pantry and dietary needs. Serve with warm cornbread or tortilla chips for a delightful accompaniment.
