  • 1/2 medium Red Onion (thinly sliced) can replace with shallot or green onions
  • 1/4 teaspoon Black Pepper optional - can replace with red pepper flakes for heat
  • 1 tablespoon Olive Oil can substitute with avocado oil

How to Make Mediterranean Quesadillas

  • In a mixing bowl, combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, sliced red onion, and black pepper. Stir until the ingredients are well blended and the mixture looks vibrant.
  • Lay a tortilla flat on a clean surface. For even filling, spoon a quarter of your colorful mixture onto one half of the tortilla, ensuring to keep it neat and tidy.
  • Gently fold the tortilla over to enclose the filling completely. This will create a delightful pocket of flavor that you'll enjoy once cooked.
  • In a non-stick skillet, warm 1 tablespoon of olive oil over medium heat. You'll know it's ready when the oil shimmers but doesn’t smoke.
  • Place the filled tortilla in the heated skillet. Cook for 3-4 minutes until the bottom is golden brown and the cheese starts to melt. Press down gently with a spatula to ensure even browning.
  • Carefully flip the quesadilla over and cook for an additional 3-4 minutes until both sides are crispy and golden. The aroma should be irresistible!
  • Remove the quesadilla from the skillet, allow it to cool slightly, then slice it into wedges. Serve warm with your favorite dip, perhaps salsa or a dollop of yogurt!
