  • 1 cup Grated Parmesan Cheese Opt for finely grated for best results.
  • 2 tablespoons Fresh Rosemary Optional; use 1 ½ tsp of Italian seasoning if not available.
  • 1 teaspoon Salt Adjust according to taste.
  • ½ teaspoon Pepper Adjust according to taste.
  • 3 cloves Garlic Minced; garlic powder can be used as a substitute.
  • 2 tablespoons Fresh Parsley Optional, for garnish.

How to Make Parmesan Roasted Potatoes

  • Preheat the oven to 400°F (200°C). Lightly spray a baking sheet with non-stick cooking spray and dust with flour.
  • Combine the chopped red potatoes in a large bowl with olive oil, grated Parmesan, rosemary (if using), salt, and pepper. Toss until evenly coated.
  • Spread the potato mixture in a single layer on the prepared baking sheet. Bake for about 30 minutes, until golden brown.
  • Add minced garlic to the potatoes and toss. Return to the oven for an additional 15 minutes, until tender and well-browned.
  • Sprinkle with fresh parsley before serving.

Notes

Optional: Drizzle with lemon juice for an extra burst of flavor. Store leftover potatoes in an airtight container for up to 3 days.
