For the Herb Oil

  • ¼ cup extra-virgin olive oil Adds richness and moisture
  • 4 cloves garlic minced
  • 2 tablespoons rosemary minced
  • 2 tablespoons thyme minced
  • 1 tablespoon kosher salt Adjust to taste
  • 1 teaspoon freshly ground black pepper Adjust to taste

For the Lamb and Aromatics

  • 6 lb. leg of lamb Select a well-marbled cut
  • 1 head garlic whole, cloves peeled
  • 1 cup cipollini onions or substitute with pearl onions or shallots
  • ¼ cup water or chicken/vegetable broth for flavor

How to Make Roasted Leg of Lamb

  • In a small bowl, mix ¼ cup of extra-virgin olive oil, minced garlic, rosemary, and thyme. Brush this mixture over the leg of lamb, season with kosher salt and pepper.
  • Preheat your oven to 400°F (200°C). Roast the lamb for 30 minutes.
  • Toss the whole garlic cloves, cipollini onions, rosemary sprigs, and halved lemons in a bowl with olive oil, salt, and pepper. Spread around the lamb.
  • After initial roasting, reduce the oven temperature to 350°F (175°C). Brush the lamb with remaining herb oil and add ¼ cup of water to the pan.
  • Continue roasting for 1 to 1.5 hours until internal temperature reaches 145°F to 150°F (63°C to 65°C).
  • Let the lamb rest for at least 15 minutes before carving.

Notes

Consider marinating the lamb overnight for deeper flavor. Garnish with fresh herbs before serving.
