Preparation
Preheat the oven to 400°F (200°C).
Lightly spray a baking sheet with non-stick cooking spray and dust it with flour.
In a large bowl, combine the cut red potatoes with olive oil, grated Parmesan cheese, salt, pepper, and optional rosemary. Toss until well coated.
Spread the seasoned potatoes in a single layer on the baking sheet.
Bake for 30 minutes until the undersides are golden brown and crispy.
Remove from the oven, toss with minced garlic, and return to the oven for another 15 minutes.
Once done, sprinkle with fresh parsley and serve immediately.
Notes
For extra flavor, consider adding a sprinkle of lemon zest before serving.
