Ingredients
  

For the Potatoes

  • 2 pounds Red Potatoes Cut into chunks
  • 4 tablespoons Olive Oil Can substitute with other cooking oil
  • 1 cup Grated Parmesan Cheese Finely grated for best results

For Seasoning

  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Pepper Adjust to taste
  • 4 cloves Garlic Minced

Optional Ingredients

  • 2 tablespoons Fresh Rosemary Chopped or substitute with Italian seasoning
  • 2 tablespoons Fresh Parsley For garnish

Preparation

  • Preheat the oven to 400°F (200°C).
  • Lightly spray a baking sheet with non-stick cooking spray and dust it with flour.
  • In a large bowl, combine the cut red potatoes with olive oil, grated Parmesan cheese, salt, pepper, and optional rosemary. Toss until well coated.
  • Spread the seasoned potatoes in a single layer on the baking sheet.
  • Bake for 30 minutes until the undersides are golden brown and crispy.
  • Remove from the oven, toss with minced garlic, and return to the oven for another 15 minutes.
  • Once done, sprinkle with fresh parsley and serve immediately.

Notes

For extra flavor, consider adding a sprinkle of lemon zest before serving.
