For the Mashed Potatoes

  • 1 cup Frozen mixed vegetables Fresh veggies can be used, adjust cooking time.
  • 1/2 pound Ground lamb Can be replaced with ground beef or turkey.
  • 1/2 cup Beef broth Vegetable broth provides a lighter taste.

Directions

  • Boil peeled and chunked Yukon Gold potatoes in salted water until fork-tender (approximately 15 minutes). While they're cooking, preheat your oven to 350°F.
  • Sauté diced onion in olive oil over medium-high heat for about 2 minutes. Add minced garlic, ground lamb, salt, and Italian seasoning; brown for around 4 minutes until fully cooked. Stir in Worcestershire sauce, frozen mixed vegetables, and beef broth; let simmer for 10 minutes until thickened.
  • Drain the cooked potatoes, return them to the pot, and mash with warmed milk, garlic, butter, and salt until creamy.
  • Grease a small ramekin, layer the rich filling at the bottom, and top it with your creamy mashed potatoes. Bake for 20 minutes or until the top is golden brown.
  • Allow the shepherd’s pie to cool for 2-3 minutes before serving.

Notes

Optional: Serve with a sprinkle of fresh herbs for added flavor and color.
