  • 1 lb Ground Beef 80/20 fat content is best
  • 1 cup Cheddar Cheese preferably Tillamook
  • 1 cup Monterey Jack Cheese
  • 1 can Rotel Tomatoes use original flavor
  • 0.5 cup Almond Milk adjust for consistency
  • 8 oz Cream Cheese room temperature
  • 0.5 cup Heavy Cream
  • 1 tsp Garlic Powder

For Serving Suggestions

  • 2 cups Pork Rinds keto-friendly
  • 1 cups Celery Sticks
  • 1 cups Cucumber Slices
  • 1 cup Sliced JalapeƱos optional

Preparation Instructions

  • Heat a skillet over medium-high heat and add the ground beef. Break it apart and cook for about 5-7 minutes until browned.
  • Lower the heat to medium and add in both cheeses. Stir frequently for 2-3 minutes until melted and combined.
  • Pour in the Rotel tomatoes and almond milk, stirring until creamy, about another 2-3 minutes.
  • Add cubed cream cheese, heavy cream, and garlic powder. Stir for 2-3 minutes until smooth.
  • Transfer the dip to a serving bowl or slow cooker set on low. Serve warm with dippers.

Notes

Let cream cheese sit at room temperature for 30 minutes for a smooth texture. Adjust consistency with almond milk as needed.
