Ingredients
  

For the Meatballs

  • 1 lb Ground Turkey Can be substituted with ground chicken or beef.
  • 1 tablespoon Onion Powder Freshly ground is preferred.
  • 1 tablespoon Garlic Powder Adjust for personal taste.
  • 1 small Yellow Onion Diced into 1/2-inch pieces.

For the Chili Sauce

  • 2 tablespoons Chili Powder Modify for heat preference.
  • 1 tablespoon Ground Cumin Essential for flavor depth.
  • 1 cup Mushrooms Sliced.
  • 1 can Black Beans Rinsed to cut sodium.
  • 1 cup Frozen Corn No need to thaw.
  • 1 can Diced Tomatoes Using San Marzano is optimal.
  • 1 cup Tomato Sauce Enhances flavor richness.
  • to taste Salt & Pepper Adjust for seasoning.

Instructions
 

Preparation

  • Combine ground turkey with 1 tablespoon each of onion powder and garlic powder. Add salt and pepper to taste, then mix gently until fully integrated.
  • Shape the mixture into small meatballs, about the size of a golf ball—aim for 20-24 meatballs.
  • Dice the yellow onion and slice the mushrooms thinly.
  • Mix remaining onion powder, garlic powder, chili powder, and cumin in a bowl.
  • Layer the meatballs in a single layer in the crockpot. Then add the diced tomatoes, tomato sauce, onions, mushrooms, black beans, and frozen corn.
  • Sprinkle the prepared spice mixture over all the ingredients and gently stir to combine.
  • Cover and cook on high for 2-3 hours or low for 3-4 hours.
  • Adjust seasoning before serving, tasting as you go.

Notes

Optional: Serve topped with fresh cilantro for added color and flavor.
