How to Make Slow Cooker Corned Beef

  • Start by chopping the medium yellow onion, large carrots, celery ribs, and baby potatoes into bite-sized pieces. Add these vibrant veggies to the bottom of your slow cooker for a flavorful base.
  • Place the corned beef brisket directly on top of the vegetables. Generously season it with kosher salt and freshly ground black pepper, then sprinkle with pickling spice, thyme sprigs, and bay leaves for that irresistible flavor.
  • Pour water into the slow cooker until the meat is almost fully submerged. This will keep the corned beef moist and infused with all the delicious seasonings as it cooks.
  • Cover and set your slow cooker to low for about 7-8 hours for a tender, melt-in-your-mouth experience, or on high for 4 ½ hours if you're short on time.
