Directions

  • Start by placing the boneless, skinless chicken thighs at the bottom of your 6-quart slow cooker.
  • In a mixing bowl, whisk together the low-sodium soy sauce, honey, tomato paste, chili paste, minced garlic, and rice vinegar until well blended.
  • Pour the delicious sauce mixture over the chicken thighs in the slow cooker, ensuring they're well coated.
  • Cover the slow cooker and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours.
  • Remove the chicken from the slow cooker once done. Whisk cornstarch into the sauce and cover again, cooking on HIGH for an additional 15-30 minutes until it thickens.
  • Once thickened, return the chicken to the sauce, ensuring it's well-glazed before serving.

Notes
