  • 2 tbsp Chili Powder Adjust heat preference.
  • 1 tbsp Ground Cumin
  • 2 tbsp Vegetable Oil Can replace with canola if desired.
  • 1 tbsp All-Purpose Flour
  • 28 oz Diced Tomatoes Opt for San Marzano for best results.
  • 2 cloves Garlic Minced.
  • 1 large Onion Diced.
  • 1 small Bell Pepper Diced.
  • 16 oz Kidney Beans Drained and rinsed.
  • 16 oz Black Beans Drained and rinsed.
  • 1.75 cups Beef Broth Low-sodium preferred.
  • 1.5 tbsp Brown Sugar
  • 2 tbsp Barbecue Sauce

Instructions
 

How to Make Slow Cooker Stew Meat Chili

  • Heat oil in a skillet over medium-high heat until shimmering.
  • Add the beef stew meat in batches, browning them for 3-5 minutes until golden brown.
  • Sprinkle in the chili powder and ground cumin, cooking for an additional minute.
  • Evenly sprinkle flour over the seared beef, stirring continuously for 1 minute.
  • Carefully transfer the browned beef into the slow cooker.
  • Toss in the diced onion, bell pepper, and minced garlic; stir to mix.
  • Add diced tomatoes, rinsed beans, beef broth, barbecue sauce, brown sugar, and a pinch of salt.
  • Stir everything together until combined.
  • Place the lid on your slow cooker and set it to Low for 6-8 hours.
  • Once cooking is done, taste and adjust seasoning if needed.
  • Ladle the chili into bowls and garnish with fresh chopped parsley.
