  • 1 cup asparagus trimmed and washed
  • 1/2 cup sun-dried tomatoes diced
  • 1 cup mozzarella cheese sliced
  • 1/4 cup fresh basil chopped

How to Make Stuffed Chicken Breast with Asparagus

  • Preheat your oven to 400°F.
  • Prepare the chicken breasts by patting them dry.
  • Mix together Italian seasoning, garlic powder, paprika, salt, and pepper. Season the chicken breasts with the mix.
  • Trim and wash the asparagus, then lay out mozzarella slices.
  • Dice sun-dried tomatoes and sprinkle over mozzarella. Add fresh basil.
  • Roll up asparagus with mozzarella and tomatoes tightly.
  • Cut a pocket in each chicken breast, stuff with the rolled asparagus, and secure with toothpicks.
  • Sear the chicken in olive oil in an oven-safe skillet over medium-high heat for 3-5 minutes per side.
  • Transfer the skillet to the oven and bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F.
  • Remove toothpicks before serving.
