Ingredients
  

  • - 12 oz penne or linguine pasta
  • - 1 lb large shrimp peeled and deveined
  • - 4 tbsp butter
  • - 4 garlic cloves minced
  • - 1/4 tsp red pepper flakes optional
  • - 1 cup heavy cream
  • - 1/2 cup grated Parmesan
  • - 1 cup shredded mozzarella
  • - Zest and juice of 1 lemon
  • - 1/2 cup white wine or seafood broth
  • - Salt & black pepper to taste
  • - 2 tbsp chopped fresh parsley

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease baking dish.
  • Cook pasta until al dente. Reserve 1/4 cup pasta water. Drain.
  • In a skillet, melt butter. Sauté garlic and pepper flakes for 1 min.
  • Add shrimp, season, and cook until pink. Remove shrimp.
  • Deglaze with wine/broth. Add cream, lemon juice/zest, Parmesan, and pasta water. Simmer.
  • Add pasta, stir to coat. Gently fold in shrimp.
  • Pour into baking dish. Top with mozzarella.
  • Bake for 15–20 minutes or until golden and bubbly.
  • Garnish with parsley. Rest 2 minutes. Serve hot.

Notes

- Assemble ahead and refrigerate until ready to bake
- Reheat with a splash of broth or cream to maintain creaminess
