Ingredients
  

  • **Base**
  • - 2 tbsp butter
  • - 1 cup onion finely diced
  • - 7 cloves garlic minced
  • - 3 oz sun-dried tomatoes chopped
  • - ¾ cup dry white wine or broth + lemon
  • **Finish**
  • - 4 cups cooked shredded chicken
  • - 1 tsp Italian seasoning
  • - 1 tsp garlic powder
  • - 1 tsp onion powder
  • - ½ tsp garlic salt
  • - ½ tsp paprika
  • - 32 oz chicken broth
  • - ½ cup heavy cream
  • - ½ cup grated parmesan
  • - 2 cups chopped spinach

Instructions
 

  • **Caramelize Onion**: Melt butter in a large pot. Add onion and cook ~10 min until soft and golden.
  • **Add Garlic & Tomatoes**: Stir in garlic and sun-dried tomatoes. Cook 3–4 minutes.
  • **Deglaze**: Add white wine. Scrape bottom and simmer for 2–3 min.
  • **Simmer**: Add chicken, seasoning, and broth. Simmer 10 min.
  • **Finish**: Remove from heat. Stir in cream, parmesan, and spinach. Let rest 5 min. Serve hot.

Notes

- Use coconut cream + nutritional yeast for dairy-free
- Freeze before adding cream for best texture
- Store in fridge up to 4 days
