Ingredients
  

For the Chili

  • 3 lbs Boneless Skinless Turkey Thighs Substitute with turkey breast or ground turkey.
  • 8 pcs Fresh Tomatillos Essential for authentic flavor.
  • 2 pcs Poblano Chiles Must be charred and peeled.
  • 1 pcs Jalapeño Optional for extra heat.
  • 4 cloves Garlic Fresh is preferred.
  • 1 cup Cilantro Fresh herb that brightens the dish.
  • 1 pcs Lime Juice Fresh is recommended.
  • 4 cups Chicken Stock Substitute with vegetable stock for vegetarian.
  • 1 pcs Yellow Onions Can substitute with white onions.
  • 2 tablespoons Olive Oil Can substitute with canola oil.
  • 1 teaspoon Cumin Spice that builds flavor.
  • 1 teaspoon Chipotle Powder Spice that builds flavor.
  • 1/4 teaspoon Ground Cloves Spice that builds flavor.
  • 2 pcs Bay Leaves Adds aroma during cooking.

Instructions
 

Preparation

  • Roast poblano chiles over an open flame or under the broiler until charred. Place in a bag to steam for easier peeling.
  • Remove husks from tomatillos, slice them in half, and broil with garlic until softened and charred (about 4-5 minutes).
  • In a blender, combine roasted tomatillos, poblano chiles, fresh cilantro, lime juice, salt, and a pinch of sugar. Blend until smooth.
  • Cut turkey thighs into 1-inch chunks. Season with salt and pepper.
  • In a large pot, heat olive oil over medium-high heat. Add turkey and brown on all sides for about 3-4 minutes per batch.
  • Remove turkey, add diced yellow onions to the same pot. Cook until transparent and soft, then stir in minced garlic and cumin, sautéing for 30 seconds.
  • Return turkey to the pot, pour in verde sauce and chicken stock. Stir in additional spices and simmer uncovered for 3-4 hours.
  • Before serving, taste and adjust seasoning. Remove bay leaves and serve hot, topped with favorite garnishes!
  • Optional: Serve with warm corn tortillas for a satisfying meal.

Notes

Allow chili to rest for 15-20 minutes after cooking for the flavors to meld beautifully. Ideal for meal prepping.
