  • Cook Potatoes: Dice your Yukon Gold or russet potatoes into small cubes and boil them in salted water until tender, about 10 minutes. Drain well to remove excess moisture, ensuring they don’t get soggy.
  • Sauté Ingredients: In a large skillet, heat a drizzle of oil over medium heat. Add diced onions and sauté them until they’re golden brown and fragrant, for about 5-7 minutes.
  • Combine and Cook: Add the shredded corned beef and cooked potatoes to the skillet. Press the mixture down with a spatula, allowing it to cook until crispy, about 8-10 minutes. Flip and repeat to achieve that beautiful crust.
