Ingredients
  

  • - 6 cups peeled and diced potatoes
  • - 1 small onion chopped
  • - 3 cloves garlic minced
  • - 1 bell pepper chopped
  • - 2 celery stalks diced
  • - 1 tsp smoked paprika
  • - 1 tsp Cajun seasoning
  • - 1/2 tsp dried thyme
  • - Salt and pepper to taste
  • - 4 cups chicken or vegetable broth
  • - 1 cup heavy cream or half-and-half
  • - 1 tbsp butter
  • - 1/2 cup shredded cheddar cheese optional
  • - 1/4 tsp cayenne pepper optional
  • - 1/4 cup chopped green onions for garnish

Instructions
 

  • Add all base ingredients (except cream, butter, and toppings) to slow cooker.
  • Cook on low 6–7 hours or high 3–4 hours until potatoes are soft.
  • Mash or blend part of the soup for desired consistency.
  • Stir in cream, butter, and cayenne (if using); cook 15–20 more minutes.
  • Serve hot, topped with cheese and green onions.

Notes

- For dairy-free: use coconut milk or cashew cream
- Add cooked sausage or chicken for more protein
- Freeze cooled leftovers up to 2 months
