Corned Beef

  • 2-3 pounds corned beef brisket The star protein of the dish, pre-brined for the best taste.
  • 1 teaspoon kosher salt Essential seasoning; adjust according to taste.
  • 1 teaspoon freshly ground black pepper Essential seasoning; adjust according to taste.

Seasoning

  • 2 tablespoons store-bought pickling spice Adds traditional tangy flavor; homemade can be used.
  • 4 sprigs thyme Brings aromatic earthiness; substitute with dried thyme (1 tsp for every fresh sprig).
  • 2 bay leaves Impart depth to the broth; remove before serving.

Preparation

  • Start by chopping the onion, carrots, celery, and potatoes. Place them at the bottom of your slow cooker.
  • Position the corned beef brisket atop the vegetables and sprinkle salt, pepper, and pickling spice over it.
  • Add thyme and bay leaves on top of the meat. Pour in enough water until the beef is almost fully submerged.

Cooking

  • Set your slow cooker to low heat and cook for 7-8 hours, or on high for 4.5 hours.
  • Once the beef is tender, add cabbage to the pot and cook on high for an additional 45 minutes to 1 hour.
  • Transfer the sliced corned beef to a cutting board and slice it. Arrange slices with the vegetables on a plate.

Notes

Garnish with fresh parsley for added color and flavor. Adjust cooking times based on your slow cooker model.
