Equipment

Ingredients
  

  • 1 lb ground beef 80/20
  • 4 large flour tortillas
  • 1 cup shredded cheese half cheddar, half American
  • Salt pepper, garlic powder
  • Optional: 1 tsp smoked paprika + ½ tsp onion powder
  • Toppings: Pickles diced onions, shredded lettuce, burger sauce, ketchup, mustard

Instructions
 

  • Preheat a cast-iron skillet or griddle over medium-high heat.
  • Press a portion of ground beef directly onto one side of each tortilla.
  • Season beef side with salt, pepper, and optional seasoning blend.
  • Place beef-side-down in skillet; cook for 2–3 minutes until crisp.
  • Flip, add cheese, and fold the tortilla in half.
  • Cook both sides until golden brown and cheese is melted.
  • Rest 1–2 minutes before slicing and serving.

Notes

Make it vegetarian: Use plant-based beef or seasoned black beans.
Go gluten-free: Use almond or cassava tortillas—but handle gently.
Cheese tip: Shred your own for optimal melt—pre-shredded often clumps.
Crisping trick: Mayo on the outside of tortillas = golden perfection.
