Cooking Instructions

  • Cut the bacon into 1-inch pieces and cook in a skillet over medium heat until crispy, about 8-10 minutes. Reserve 2 tablespoons of drippings.
  • Remove tough center stalks from collard greens and chop the leaves into 2-3 inch pieces.
  • Dice the onion and mince the garlic.
  • Combine chicken stock, reserved bacon drippings, apple cider vinegar, and crushed red pepper in a bowl and whisk together.
  • Spray or oil the slow cooker, layer collard greens, onion, and garlic, then pour the braising liquid over and stir.
  • Cover and cook on low for 10 hours until greens are tender.
  • Season with salt and pepper before serving; stir in reserved crispy bacon.

Notes

For added flavor, consider adding diced ham or smoked sausage along with the bacon.
