For the Carrots

  • 500 grams carrots (Dutch or regular) Provides natural sweetness and color; substitute ordinary carrots cut to size.
  • 2 tablespoons maple syrup Adds sweetness and depth; honey can be used as a substitute.
  • 1 tablespoon sriracha Adjust to taste for desired heat.

For the Chickpeas

  • 400 grams chickpeas (canned) Adds protein and crunch; dry chickpeas can be used if soaked beforehand.

For the Yogurt Sauce

  • 250 grams plain yogurt (Greek recommended) Substitute with non-dairy yogurt for vegan option.
  • 1 tablespoon lemon juice Provides acidity to balance the dish.
  • 1 clove finely grated garlic For flavor in the yogurt sauce.

For Garnishing

  • 2 tablespoons finely chopped coriander/cilantro Adds freshness.
  • 30 grams toasted pistachios Optional for added crunch.

Cooking Steps

  • Preheat your oven to 200°C (425°F). Arrange the racks for optimal airflow.
  • Drain the canned chickpeas and spread them out on a tray. Roast for about 10 minutes to dry them out.
  • Toss your carrots with maple syrup, sriracha, olive oil, salt, and pepper in a bowl until evenly coated.
  • Place both the carrots and chickpeas in the oven. Roast the chickpeas for 20-25 minutes until crispy, tossing occasionally. The carrots should bake for about 30 minutes until tender and caramelized.
  • In a bowl, combine yogurt, finely grated garlic, lemon juice, olive oil, and a pinch of salt. Let it sit to develop flavors.
  • For extra kick, mix together additional maple syrup and sriracha to serve as a drizzle.
  • To serve, spread the creamy yogurt sauce on a plate, layer on roasted carrots, drizzle with extra sauce, and top with crispy chickpeas. Garnish with cilantro and pistachios.

Notes

Cut carrots into even pieces for uniform roasting. Store leftovers separately to maintain texture.
