How to Make Teacher Cookies

  • Cream together butter and sugar in an electric mixer until light and fluffy.
  • Mix in the egg, yogurt, banana extract, and vanilla extract until smooth.
  • Sift together the cinnamon, flour, baking powder, and salt in a medium bowl.
  • Add flour mixture gradually to the mixer while mixing on low speed until a smooth dough forms.
  • Turn out dough onto a sheet of parchment paper, forming it into a rough ball.
  • Knead softly until dough is smooth and pliable, then roll out to about 3/8" thick.
  • Chill dough sandwiched between parchment on a baking pan for thirty minutes.
  • Preheat oven to 350°F while the dough is chilling.
  • Transfer dough to another baking sheet by lifting off the top layer of parchment.
  • Cut dough into rectangles using a cookie cutter or knife.
  • Bake cookies for 10-14 minutes or until they're firm and just starting to brown.
  • Cool cookies on the parchment sheet, then slide onto a wire rack until completely cool.
  • Keep any extra cut-out cookies chilled until baking.
  • Warm the icing according to instructions, outlining cookies with a thin line of yellow.
  • Let icing dry completely before drawing ruler markings.
