Ingredients
  

Chili Base

  • 2 lb ground beef or ground turkey for a lighter option
  • 1 large yellow onion diced
  • 1 large green bell pepper diced
  • 30 oz kidney beans two cans, drained
  • 30 oz tomato sauce can
  • 0.5 cup chicken bone broth or vegetable broth
  • 2 tbsp avocado oil for sautĂ©ing

Spices

  • 1 tsp black pepper adjust to taste
  • 2 tsp sea salt adjust to taste
  • 1.5 tsp paprika adds warmth
  • 1 tbsp ground cumin
  • 2 tbsp chili powder reduce for milder flavor
  • 1 tbsp dried oregano
  • 1 leaf bay leaf remove before serving

Instructions
 

Preparation

  • Dice one large yellow onion and one green bell pepper; rinse and drain two cans of kidney beans.
  • In a large pot, heat two tablespoons of avocado oil over medium heat.
  • Add the diced onion and bell pepper, cooking for about 3-4 minutes until soft.
  • Increase heat to medium-high, add 2 lbs of ground beef (or turkey), and cook until browned, about 3 minutes.
  • Stir in the spices—1 tsp black pepper, 2 tsp sea salt, 1.5 tsp paprika, 1 tbsp ground cumin, 2 tbsp chili powder, 1 tbsp dried oregano, and 1 bay leaf.
  • Cook for an additional 2-3 minutes to develop the flavors.
  • Pour in a 30 oz can of tomato sauce and half a cup of chicken bone broth.
  • Add in the drained kidney beans, bring to a boil, then simmer uncovered for 15-20 minutes.
  • Remove the bay leaf, taste, and adjust the seasoning as needed.
  • Ladle into bowls and serve warm.

Notes

Top with shredded cheese or diced avocado for extra flavor.
