Step 1: Make the Spiced Pear Syrup
In a small saucepan, combine water, white wine (or apple juice), sugar, cinnamon stick, star anise, and lemon peel.
Bring to a gentle boil over medium-high heat, stirring until the sugar dissolves.
Add chopped pears and reduce heat to low. Simmer for 30 minutes until pears are soft and the mixture becomes syrupy.
Remove from heat and strain through a fine-mesh sieve into a clean jar. Do not press the fruit—this keeps the syrup clear.
Chill the syrup in the fridge until ready to use.
Step 2: Mix the Cocktail
Fill a cocktail shaker with ice.
Add vodka, Lillet Blanc, lemon juice, and 2–3 oz of the spiced pear syrup (adjust to your sweetness preference).
Shake vigorously for 15–20 seconds until well chilled.
Step 3: Serve and Garnish
Strain into two cocktail glasses.
Lightly twist or slap a rosemary sprig to release its aroma and place one in each glass as garnish.
Serve immediately and enjoy!
