How to Make Corned Beef and Cabbage

  • Start by chopping the onion, carrots, celery, and potatoes. Layer them evenly in the bottom of your slow cooker.
  • Place the corned beef brisket right on top of the arranged vegetables. Season with kosher salt and black pepper, then sprinkle the pickling spice over the beef.
  • Lay the thyme sprigs and bay leaves atop the corned beef.
  • Pour in enough water to fill the slow cooker until the meat is almost fully submerged.
  • Set your slow cooker to low and cook for 7-8 hours or on high for about 4.5 hours.
  • Stir in the green cabbage and let it cook on high for an additional 45 minutes until tender.
  • Slice the corned beef and plate it alongside the vegetables.

Notes

Serve with a dollop of mustard for an extra zing. Quality matters when choosing corned beef brisket.
