Preparation

  • In a bowl, blend together mayonnaise, finely chopped sun-dried tomatoes, minced garlic, oregano, red pepper flakes, and lemon zest. Allow this mixture to rest for a few minutes to meld those delicious flavors together.
  • Preheat your oven to 425°F. Line a baking sheet with parchment paper, and place the halibut fillet skin-side down. Generously season both sides with salt and freshly ground black pepper.
  • Carefully spread the creamy sun-dried tomato mixture evenly over the top of the halibut, aiming for about a 1/4 inch layer to ensure a rich topping.
  • Slide the baking sheet into the preheated oven and bake for 15-17 minutes. The halibut is ready when it becomes opaque and flakes easily with a fork.
  • Once baked, take the halibut out of the oven, and immediately sprinkle fresh basil over the top to add a burst of flavor before serving.
