How to Make Tender Slow Cooker Mediterranean Chicken

  • Trim and cut chicken thighs into 2-inch pieces. Season with salt and pepper.
  • Heat olive oil in a skillet over medium heat. Brown chicken pieces for about 3-4 minutes per side.
  • In the same skillet, add the diced sweet onion and cook until translucent, about 4-5 minutes.
  • Transfer the browned chicken, sautéed onions and garlic, roasted red peppers, olives, capers, and dried herbs into your slow cooker. Pour in chicken broth and gently stir.
  • Cover and cook on low for 4 hours until chicken is tender and easily shreddable.
  • Before serving, adjust seasoning with salt and pepper, stir in lemon zest, and add lemon juice.

Notes

Optional: Garnish with fresh herbs or a sprinkle of feta cheese for an extra burst of flavor. Store leftovers in an airtight container for up to 4 days.
