For the Cream Sauce

  • 3 cloves garlic, finely chopped
  • 1 tablespoon fresh thyme leaves Dried thyme can be used, though use less (1/3 of the amount).
  • 1/2 teaspoon crushed red pepper flakes Omit for a milder dish.
  • 1 cup low-sodium chicken broth
  • 1/2 cup finely chopped sun-dried tomatoes
  • 1 cup heavy cream Half-and-half can be used for a lighter version.
  • 1/2 cup finely grated Parmesan Grana Padano can be used as an alternative.
  • 1/4 cup torn fresh basil For garnish.

Recipe Steps

  • Preheat the oven to 375°F.
  • Heat olive oil in a large skillet over medium-high heat.
  • Season the chicken breasts generously with salt and pepper and sear for about 5-7 minutes on each side.
  • Remove the chicken from the skillet and set aside. Sauté the garlic, thyme, and red pepper flakes for about 30 seconds to 1 minute.
  • Stir in the chicken broth, sun-dried tomatoes, heavy cream, and Parmesan cheese, mixing until combined and slightly thickened.
  • Return the chicken to the skillet, spoon the sauce over it, and transfer to the oven to bake for about 15-20 minutes.
  • Garnish with torn basil before serving.

Notes

Serve with extra Parmesan if desired. This dish pairs beautifully with pasta, rice, or a fresh garden salad.
