Ingredients
  

For the Soup Base

  • 2 tablespoons Butter unsalted
  • 2 teaspoons Fresh Thyme or dried thyme
  • 3 cloves Garlic minced
  • 2 leaves Bay Leaves discard after cooking
  • 1 medium Sweet Onion diced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Black Pepper freshly ground
  • 6 cups Chicken Stock homemade or store-bought
  • 1 teaspoon Salt to taste

For the Chicken and Vegetables

  • 2 pounds Chicken Breasts or thighs
  • 2 tablespoons Dried Parsley or fresh parsley
  • 2 stalks Celery Stalks diced
  • 2 medium Carrots diced

For the Dumplings

  • 12 ounces Frozen Egg Noodles or other pasta
  • 1 large Egg room temperature
  • 1/2 cup Cream whole milk preferred
  • 1/2 cup Milk whole milk preferred
  • 2 cups Flour all-purpose

Preparation Steps

  • Start by dicing the onion, celery, and carrots. Mince the garlic and cut the chicken into bite-sized pieces.
  • In a mixing bowl, whisk together the egg, cream, milk, and salt. Gradually incorporate flour until a shaggy dough forms. Set aside.
  • Melt butter in a large pot over medium heat. Add the diced onion, carrots, and celery, cooking until soft (about 5-7 minutes). Stir in the minced garlic until fragrant.
  • Push the sautéed vegetables to the side of the pot and add the chicken pieces. Sear for about 5 minutes until golden brown.
  • Pour in the chicken stock and add bay leaves and thyme, allowing to simmer for 30 minutes.
  • Remove bay leaves and shred the chicken in the pot. Season with salt and pepper.
  • In a separate pot, bring salted water to a boil and cook the egg noodles until just tender, about 5 minutes. Drain and set aside.
  • Add the cooked noodles to the soup and bring to a boil.
  • Spoon small amounts of dumpling dough into the boiling soup. Cook until they float to the surface and are puffed up, about 3-5 minutes.
  • Ladle the soup into bowls, ensuring each serving has noodles, chicken, and fluffy dumplings.

Notes

Optional: Garnish with freshly chopped parsley for added flavor and color.
