Ingredients
  

  • - 1 lb lean ground beef
  • - 1 can 15 oz kidney beans, drained
  • - 1 can 15 oz black beans, drained
  • - 2 cans 14.5 oz diced tomatoes (with juice)
  • - 1 medium onion diced
  • - 3 garlic cloves minced
  • - 1 cup chopped bell peppers
  • - 2 tbsp olive oil
  • - 2 tbsp chili powder
  • - 2 tsp ground cumin
  • - Salt and pepper to taste
  • - Optional toppings: sour cream shredded cheddar, jalapeños

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add onion and cook 5 minutes.
  • Add garlic and cook 1 minute more.
  • Add ground beef and cook until browned. Drain excess fat.
  • Stir in bell peppers, chili powder, cumin, salt, and pepper. Cook 2–3 minutes.
  • Add beans and tomatoes. Stir well.
  • Simmer on low, partially covered, for 30–40 minutes.
  • Serve hot with desired toppings.

Notes

- For deeper flavor, add dark chocolate or a splash of beer
- Make ahead for richer taste the next day
- Vegan: substitute meat with lentils or plant-based crumbles
