  • Place 6 large eggs in a pot and cover them with cold water. Bring to a boil over medium heat; once boiling, cover and remove from heat. Let them sit for 12 minutes before transferring to an ice bath for easier peeling.
  • After cooling for about 5 minutes, gently tap and roll each egg on the countertop. Start peeling from the wider end, where there’s usually an air pocket, making it easier to remove the shell cleanly.
  • Cut each peeled egg in half lengthwise and scoop out the yolks into a mixing bowl. Mash the yolks with 1/4 cup mayonnaise, 1 tablespoon Dijon mustard, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1 teaspoon vinegar until smooth and creamy.
  • Use a spoon or piping bag to fill the egg white halves with the yolk mixture. Aim for a generous mound, showcasing the filling’s creamy goodness.
  • Sprinkle a little paprika over each filled egg for color. Add fresh herbs or crispy bacon bits on top for a delightful pop of flavor and texture.
