Ingredients
  

For the Falafel Mixture

  • 1 cup Dried Chickpeas Soak overnight
  • 1 small White Onion Adds moisture and sweetness
  • 3 cloves Garlic Minced can be used
  • 1 bunch Fresh Cilantro Parsley can be an alternative
  • 1 bunch Fresh Parsley Mix other herbs like dill if desired
  • 1 teaspoon Kosher Salt Sea salt works well too
  • 1 teaspoon Baking Powder Skip for denser falafel
  • 1 teaspoon Ground Coriander For authentic taste
  • 2 teaspoons Ground Cumin Key flavor component
  • 2 tablespoons All-Purpose Flour Chickpea flour for gluten-free

For Frying

  • 4 cups Vegetable Oil Canola or sunflower oil may also be used

For Serving

  • 1 cup Tahini Sauce Yogurt or hummus can be substitutes

Instructions
 

How to Make Falafel

  • Soak dried chickpeas in cold water overnight, ensuring they are covered by at least 2 inches of water.
  • Drain and pat chickpeas dry. In a food processor, pulse until coarsely broken down. Add onion, garlic, herbs, salt, baking powder, coriander, and cumin, then pulse until finely chopped.
  • Shape the mixture into 1-inch balls using a cookie scoop or hands. Place on a parchment-lined baking sheet.
  • Heat vegetable oil in a pot over medium heat until it reaches 350°F. Add falafel balls in batches, frying for 2-3 minutes until golden brown.
  • Transfer cooked falafel to a wire rack to drain excess oil. Serve warm with tahini sauce and toppings.

Notes

For the best texture, ensure chickpeas are fully soaked overnight. Adjust spices to taste before forming balls.
