How to Make Nutritional Yeast Carrot Potato Soup

  • Prepare the vegetables: Peel and cut the potatoes into 1-inch chunks, slice the carrots into ½-inch rounds, and finely dice the onion.
  • Sauté the onions: Add 2 tablespoons of vegetable broth and diced onions to a large pot over medium heat. Sauté for about 4-5 minutes until translucent.
  • Caramelize the carrots: Add sliced carrots and cook for another 3-4 minutes to caramelize edges.
  • Combine ingredients: Stir in potato chunks and pour in remaining vegetable broth. Bring to a boil, then simmer for 15-17 minutes until potatoes are tender.
  • Add seasoning: Mix in Dijon mustard, pepper, and a pinch of salt. Simmer for an additional 5-7 minutes.
  • Blend the soup: Remove from heat, cool for 2-3 minutes, then blend until smooth with an immersion blender.
  • Incorporate nutritional yeast: Stir in nutritional yeast until fully incorporated for cheesy flavor.
  • Serve it up: Dish hot, garnished with fresh herbs or nutritional yeast drizzle.
