  • Gather all your ingredients before you start cooking.
  • In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add in finely diced onion and sauté for about 5 minutes until translucent.
  • Sprinkle 2 tablespoons of flour over the sautéed onions and stir constantly for 1 minute to form a roux.
  • Gradually whisk in 3 cups of whole milk, bringing the mixture to a gentle boil. Allow it to simmer for about 1 minute.
  • Reduce heat to medium-low and slowly add in 16 ounces of Velveeta cheese, stirring until melted and smooth.
  • Stir in 4 cups of thawed or frozen chopped broccoli along with ½ teaspoon of freshly ground pepper. Cook for an additional 2-3 minutes.
  • Taste and adjust seasoning if necessary. Serve hot.
