  • - Vegetable peeler

Ingredients
  

  • #### Fruit:
  • - 2 cups clementines peeled and segmented
  • - 2 pears diced
  • - 2 apples Fuji or Honeycrisp, thinly sliced
  • - 5 kiwis peeled and diced
  • - ¾ cup pomegranate arils
  • - Optional: chopped fresh mint
  • #### Dressing:
  • - ¼ cup honey
  • - Zest + 2 tbsp juice from 1 lemon
  • - Zest + 2 tbsp juice from 1 orange
  • - 1 tsp poppy seeds

Instructions
 

  • Chill fruit ahead of time for best results.
  • In a jar, combine honey, citrus zest/juice, and poppy seeds. Shake to mix.
  • In a large bowl, gently combine clementines, apples, pears, and kiwis.
  • Pour over dressing (use enough to coat lightly) and toss gently.
  • Top with pomegranate arils and fresh mint. Serve immediately.

Notes

- Chill fruit beforehand for max freshness.
- Leftovers? Blend into a smoothie!
- Add a touch of fresh ginger for zing.
