Dressing

  • 1/4 cup unseasoned rice vinegar substitute with apple cider vinegar if needed
  • 1 clove garlic (minced) fresh garlic is best, garlic powder works in a pinch
  • 1 teaspoon fresh ginger (minced) ground ginger can be a quick substitute
  • 1 tablespoon brown sugar honey or maple syrup make great alternatives
  • 1 tablespoon Sriracha or sambal oelek adjust the amount for a milder dressing
  • 1 teaspoon Chinese hot mustard reduce quantity for a softer flavor
  • 1/4 cup extra-virgin olive oil or vegetable oil any neutral oil will work as a substitute
  • 1 teaspoon dark sesame oil essential not to omit

Salad

  • 6 cups romaine lettuce (torn) other lettuces can be used but will change the taste
  • 2 cups shredded red cabbage Savoy or green cabbage can be used instead
  • 1 large carrot (shredded) consider pre-shredded carrots for convenience
  • 1/2 cup green onions (chopped) chives can work in their place
  • 1/2 cup sliced or slivered almonds sunflower seeds are a nut-free alternative
  • 1 can mandarin oranges (drained) fresh orange segments can be substituted
  • 2 cups cooked chicken (shredded) rotisserie chicken is a quick and tasty option
  • 1 cup fried wonton strips chow mein noodles can replace them or omit for fewer calories
  • 2 tablespoons toasted sesame seeds enhances the nutty flavor and adds visual appeal

Preparation

  • In a small bowl, whisk together the unseasoned rice vinegar, minced garlic, minced ginger, brown sugar, sriracha, and Chinese hot mustard. Gradually whisk in the olive oil and dark sesame oil until well emulsified.
  • In a large bowl, combine the torn romaine lettuce, shredded red cabbage, shredded carrot, chopped green onions, slivered almonds, drained mandarin oranges, and shredded chicken. Toss gently.
  • Drizzle the freshly made dressing over the salad mix, then toss everything well to ensure all ingredients are evenly coated. Finish with a sprinkle of fried wonton strips and toasted sesame seeds for an irresistible crunch.

Notes

Always use fresh vegetables and herbs to enhance flavors. Keep the dressing separate until just before serving to maintain crispness.
