Ingredients
  

For the Chicken

  • 4 pieces bone-in chicken thighs Juicy and flavorful

For the Marinade

  • 1/4 cup extra-virgin olive oil Can be swapped with avocado oil
  • 1/4 cup lemon juice Freshly squeezed is ideal
  • 3 cloves garlic minced, or garlic powder as substitute
  • 1 tablespoon dried oregano Substitute with Italian seasoning if desired
  • 1 teaspoon dried thyme Use fresh thyme if available
  • 1 tablespoon Dijon mustard Honey mustard can add sweetness
  • 1 teaspoon kosher salt Sea salt can be used
  • 1/2 teaspoon freshly ground black pepper White pepper works too

Preparation

  • Make the Marinade: In a small bowl, mix together extra-virgin olive oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard, salt, and black pepper.
  • Marinate the Chicken: Place chicken thighs in a bowl and pour the marinade over them. Toss to coat, cover, and refrigerate for 1 to 2 hours.
  • Transfer to Baking Dish: Preheat oven to 350°F (180°C). Arrange marinated chicken thighs in a baking dish with remaining marinade.
  • Bake the Chicken: Bake for 40 to 45 minutes or until chicken reaches 175°F (80°C). Broil for the last 2-3 minutes for crispy skin.

Notes

Serve with a side of lemon herb rice for a delightful meal. Avoid marinating chicken thighs for over 3 hours to prevent mushy textures.
