Preparation

  • Cut the chicken breasts in half lengthwise and lightly beat with a meat mallet until they’re even in thickness.
  • In one bowl, whisk together the eggs and seasonings for the egg mixture. In another bowl, mix the grated Parmesan cheese and flour for the coating.
  • Dip the chicken in the egg mixture, then dredge it in the Parmesan mixture, allowing any excess to fall away.

Cooking

  • In a large non-stick skillet, heat enough olive oil to cover the bottom. Once hot, add the chicken and sauté for 4-5 minutes on each side, until crispy and golden brown.
  • In a separate saucepan, melt the unsalted butter and sauté the minced garlic until fragrant. Add the chicken broth, lemon juice, and black pepper.
