Ingredients
  

  • - 1 lb shrimp peeled and deveined
  • - 1 red bell pepper sliced
  • - 1 yellow bell pepper sliced
  • - 1 large onion sliced
  • - 2 tbsp olive oil
  • - 2 tbsp lime juice freshly squeezed
  • - 2 tbsp taco seasoning
  • - Salt and pepper to taste
  • - Optional toppings: lime wedges cilantro, avocado, sour cream

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  • Add sliced peppers and onion to the pan.
  • Toss shrimp with oil, lime juice, taco seasoning, salt, and pepper.
  • Add shrimp to the pan and gently mix with vegetables.
  • Roast for 15–20 minutes, or until shrimp are pink and veggies are tender.
  • Serve on warm tortillas or bowls. Top with lime, avocado, or sour cream.
